I had an amazing experience with the simple salt-based ramen in Hakata. Chef Yuichiro, trained in traditional Japanese ryotei and a former head chef at the Japanese Embassy in France, brings a unique touch. The whole wheat, high-hydration noodles offer a chewy texture, and the broth, made with kombu, bonito flakes, tuna flakes, and dried shiitake mushrooms, -dashi primarily from Kyushu ingredients. You can also order wine here, making it a distinctive ramen dining spot.
Located a 7-minute walk from Gojo Station in Kyoto, this spot is known for its rare miso dipping noodles. This unique dish incorporates a special blend of fish powder and chili oil, delivering a flavorful punch. Although most customers prefer the miso dipping noodles, I'm personally a big fan of the meat(niku) miso ramen- a delightful fusion of dashi, tantan, and miso flavors.
Now a popular ramen chain beyond Osaka, this place has won me over with its irresistible ramen. The clear broth, enriched with vegetable goodness, paired with straight noodles with a fantastic texture, creates a winning combination. They promote an experience where the first time you love it, the second time you appreciate its complexities, and by the third time, you're hooked. I must say, I wholeheartedly agree. lol
Ippudo has been a favorite since my first taste of their noodles in NYC. The broth is on the heavier side compared to other ramen I enjoy, but there's just something about their Akakara ramen that keeps me coming back to this spot. I know it's a well-known place, so you might not like that I'm recommending it, but I can't help it!
A cozy ramen shop near a residential area, specializing in soy sauce-based ramen. Despite its unassuming appearance, the carefully selected ingredients shine through in each bowl. I recommend the Amber soy sauce bowl.
